Icing
Method
- Pre-heat the oven to 180 degrees c
- Lightly grease 2 baking trays
- Beat the butter and sugar until creamy and light, then beat in the egg and treacle
- Fold in the sifted flours, bicarb soda and spices
- Turn out onto a lightly floured surface and knead until smooth
- Cover with plastic wrap and chill for about 15 minutes
- Divide the dough into 2 pieces and roll out between 2 lightly floured sheets of greaseproof paper until about 4 mm thick, lay sheets on a tray and chill for 15 minutes
- Cut the dough into shapes using biscuit cutters and place on greased baking trays and bake for about 10 minutes
- Remove from the oven and cool on a wire rack
- To make the icing lightly beat the eggs white in a bowl, add the lemon juice, icing sugar and stir until glossy and well mixed.
- Divide into separate bowls for colouring
- Make some piping bags from greaseproof paper and put your icing inside them (you could also use sandwich bags with a very small hole cut int he corner for piping)
- Go crazy on your biscuits with the icing
