Ingredients
1 side of Pork ribs (about 500 grams)1 cinnamon stick1 tspn cloves2 star anise1 tspn allspice1 tspn salt1 tbls malt vinegar2 Chicken thighsMethod
- Put the pork ribs, all the spices into a large stock pot and cover with cold water.
- Bring to boil and reduce to simmer.
- Cover and simmer for an hour and a half or until meat is easy to break away from the rib bones.
- Drain (discard water) and place the ribs into a large bowl ready for the marinade.
Marinade Ingredients
100ml Plum sauce50ml BBQ sauceDash of Tabasco sauce (as hot as you like)Method for the Marinade
Marinate cooked ribs and chicken thigh meat in sauce for at least an hour.Cooking the Chicken and Ribs
Preheat over to 180 degrees Celcius (or pre-heat the BBQ).Cook in oven for about 20 mins or about 10 minutes each side on BBQ.Serve with roasted sweet potato and cinnamon butter, a side salad and lots of serviettes.
