Ingredients

  • 140 g butter, cubed and softene
  • 115 g dark brown sugar
  • 90 g Treacle (I used molasses)
  • 1 egg
  • 250 g plain flour
  • 30 g self-raising flour
  • 3 tspn round ginger
  • 2 tspn cinnamon
  • 3/4 tspn ground cloves
  • 3/4 ground nutmeg
  • 1 tspn bicarb soda
  • Icing

  • 1 egg white
  • 1/2 tspn lemon juice
  • 125 g icing sugar
  • assorted colours
  • Method

    1. Pre-heat the oven to 180 degrees c
    2. Lightly grease 2 baking trays
    3. Beat the butter and sugar until creamy and light, then beat in the egg and treacle
    4. Fold in the sifted flours, bicarb soda and spices
    5. Turn out onto a lightly floured surface and knead until smooth
    6. Cover with plastic wrap and chill for about 15 minutes
    7. Divide the dough into 2 pieces and roll out between 2 lightly floured sheets of greaseproof paper until about 4 mm thick, lay sheets on a tray and chill for 15 minutes
    8. Cut the dough into shapes using biscuit cutters and place on greased baking trays and bake for about 10 minutes
    9. Remove from the oven and cool on a wire rack
    10. To make the icing lightly beat the eggs white in a bowl, add the lemon juice, icing sugar and stir until glossy and well mixed.
    11. Divide into separate bowls for colouring
    12. Make some piping bags from greaseproof paper and put your icing inside them (you could also use sandwich bags with a very small hole cut int he corner for piping)
    13. Go crazy on your biscuits with the icing
