BBQ Chicken and Ribs

Ingredients

  • 1 side of Pork ribs (about 500 grams)
  • 1 cinnamon stick
  • 1 tspn cloves
  • 2 star anise
  • 1 tspn allspice
  • 1 tspn salt
  • 1 tbls malt vinegar
  • 2 Chicken thighs
  • Method

    1. Put the pork ribs, all the spices into a large stock pot and cover with cold water.
    2. Bring to boil and reduce to simmer.
    3. Cover and simmer for an hour and a half or until meat is easy to break away from the rib bones.
    4. Drain (discard water) and place the ribs into a large bowl ready for the marinade.

    Marinade Ingredients

  • 100ml Plum sauce
  • 50ml BBQ sauce
  • Dash of Tabasco sauce (as hot as you like)
  • Method for the Marinade

  • Marinate cooked ribs and chicken thigh meat in sauce for at least an hour.
  • Cooking the Chicken and Ribs

  • Preheat over to 180 degrees Celcius (or pre-heat the BBQ).
  • Cook in oven for about 20 mins or about 10 minutes each side on BBQ.
  • Serve with roasted sweet potato and cinnamon butter, a side salad and lots of serviettes.
