Roast pumpkin, chevre and basil penne

Ingredients

  • 250 grams pumpkin diced
  • 1 red onion large dice
  • 2 cups penne pasta
  • 50 grams goats cheese
  • large handful basil leaves
  • 50 grams toasted walnuts
  • 50ml Olive oil
  • Method

    1. Roast the pumpkin and onion with salt, pepper and olive oil for about 25 minutes until the pumpkin is soft
    2. Cook the penne, drain and set aside
    3. Pour some oil into a pan add all the other ingredients and mix well and cook until the basil leaves are wilted
    4. Season with salt and pepper
    5. Enjoy!
