Japanese Style Salmon and Sushi Rice

Ingredients

  • 2 salmon fillet pieces
  • 1/4 cup sesame seeds. I use a mix of regular and black seed
  • 1 cup sushi rice
  • 1 and 1/2 cups water
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of sugar
  • 1/4 tsp salt
  • 2 seaweed sheets (cut into small squares and toasted under the grill)
  • 200 gr green beans cleaned
  • Oyster sauce
  • Sesame oil
  • Cooking oil (for frying)
  • Sweet soy sauce (for garnish)
  • Pickled ginger (for garnish)
  • Method

    1. Clean the salmon by removing the bones and scaling the skin.
    2. Roll the salmon in the sesame seeds place in the fridge to rest.
    3. place the rice and water in a sauce pan and bring to the simmer. Place a lid and turn down to the lowest setting. Cook for about 20 minutes until tender.
    4. Mix the Vinegar, sugar and salt together allow the sugar to dissolve
    5. Add the vinegar mixture to the warm rice and stir until mixed.
    6. Heat the oil in a pan and cook the prepared salmon fillets until cooked through
    7. Meanwhile stir fry the greed beans in some oil and at the last minute add the oyster sauce.
    8. for serving begin with a layer of rice then some seaweed sheet and alternate until you have enough.
    9. Top with the green beans and finally the salmon
    10. Add some pickled ginger to the top of the salmon
    11. Drizzle some sesame oil on and around the plate.
