Piri-piri chicken

Ingredients

  • 8 garlic cloves, crushed

  • Juice of 3 lemons + wedges to serve

  • 1/3 cup whiskey

  • 1 fresh bay leaf

  • 2 tablespoons smoked paprika

  • 1/4 cup olive oil

  • 4 chicken breast or 8 chicken thighs fillets

  • 1 red onion, sliced thin into rings

  • 500 grams cherry tomatoes

  • 4 long red chillies

  • 8 slices of ciabatta bread

  • Piri-piri sauce:
  • 2 tablespoons olive oil

  • juice of 1/2 lemon

  • 1 long red chilli

  • 1 garlic clove crushed

  • Method

      Piri-piri sauce:
    1. Combine all ingredients for the sauce in a bowl, season with salt and mix well.
    2. Chicken:
    3. Combine garlic, 2/3rd of the lemon juice, smoked paprika, whiskey, bay leaf, half the oil and the chicken in a shallow bowl. Cover and marinate for at least 2 hours
    4. Combine the remaining lemon juice, 1 tablespoon of oil and the onions. toss to mix well. set aside to marinate.
    5. Preheat a pan or char grill and grill the marinated chicken until cooked, basting as it cooks.
    6. Brush the tomatoes, bread slices and the chillies with remaining oil and grill each for about 2-3 minutes on each side.
    7. Top the chicken with the onions, grilled chilli, tomato and bread slices.
