Lime coconut cake

Ingredients

  • Melted butter to grease
  • 200 grams self-raising flour
  • 155 grams caster sugar
  • 1 teaspoon baking powder
  • 65 grams shredded coconut
  • 150 grams melted butter
  • 3 eggs
  • 125 ml fresh lime juice
  • 1 tablespoon fresh grated lime rind
  • Method

    1. Pre-heat the oven to 180 degrees. Grease and line with paper an 18 cm square tin
    2. Add 50 grams of the coconut (reserve the remaining coconut for later) and the other dry ingredients in a large bowl. Mix well until combined
    3. mix the remaining ingredients into the dry mixture. Mix well for a minute or so.
    4. Pour into the prepared tin. Smooth the surface and bake for 40 minutes.
    5. Sprinkle the remaining coconut over the cake and bake for a further 10 minutes.
