Pad Thai

Ingredients

  • 2 tsp peanut oil

  • 400 grams chicken thigh, sliced thin

  • 3 corriander sprigs, pick leaves and finely chop stems

  • Half long red chilli, finely chopped

  • 450 grams cooked rice stick noodles

  • 2 cups of bean sprouts

  • 2 eggs, lightly beaten

  • juice of 2 limes + 4 wedges to serve

  • 2 tablespoons fish sauce

  • 1 tablespoon white sugar

  • 2 tablespoons roasted unsalted peanuts, chopped

  • 200 grams green beans, cut into 2 cm lengths

    Method

    1. Heat oil in wok on a medium high heat. Add chicken, corriander, chilli and stir fry until chicken is cooked

    3. Add the noodles, beans, lime juice, bean shoots, egg, fish sauce and sugar. Stir fry for 2-3 minutes until egg is just cooked.

    5. Remove from heat and serve into 4 bowls, top with the chopped peanuts and corriander leaves.
