- Piri-piri sauce:
- Combine all ingredients for the sauce in a bowl, season with salt and mix well. Chicken:
- Combine garlic, 2/3rd of the lemon juice, smoked paprika, whiskey, bay leaf, half the oil and the chicken in a shallow bowl. Cover and marinate for at least 2 hours
- Combine the remaining lemon juice, 1 tablespoon of oil and the onions. toss to mix well. set aside to marinate.
- Preheat a pan or char grill and grill the marinated chicken until cooked, basting as it cooks.
- Brush the tomatoes, bread slices and the chillies with remaining oil and grill each for about 2-3 minutes on each side.
- Top the chicken with the onions, grilled chilli, tomato and bread slices.
