Lime coconut cake

Method
- Pre-heat the oven to 180 degrees. Grease and line with paper an 18 cm square tin
- Add 50 grams of the coconut (reserve the remaining coconut for later) and the other dry ingredients in a large bowl. Mix well until combined
- mix the remaining ingredients into the dry mixture. Mix well for a minute or so.
- Pour into the prepared tin. Smooth the surface and bake for 40 minutes.
- Sprinkle the remaining coconut over the cake and bake for a further 10 minutes.
