Pork with Peppercorns

Serves 4

Ingredients


  • 400g pork shoulder cut into strips
  • 3 teaspoons green curry paste
  • 2 tablespoons olive oil
  • 3 long green chillies, chopped with seeds removed
  • 400g green beans trimmed and cut into 4cm lengths
  • 1/2 cup coconut milk
  • 1/4 cup fish sauce
  • 1 teaspoons sugar
  • 1-2 teaspoons canned green peppercorns
  • 1/2 bunch basil leaves
  • steamed rice to serve

  • Method

    1. Combine the pork and curry paste.
    2. Heat 1 tablespoon on oil in a wok and stir fry meat for 3 minutes or until just cooked. Remove and set aside
    3. heat the remaining 1 tablespoon of oil and add the chillies and green beans, stir fry for 2 minutes. 
    4. Add the coconut milk, fish sauce, sugar and peppercorns and stir until combined
    5. Return pork to the wok and cook for a further 1-2 minutes until heated through.
    6. Stir through some basil leaves and serve on steamed rice topped with more basil leaves.
