Two Cheese and Tomato Pie

Ingredients

  • 3 eggs lightly whisked
  • 250ml milk
  • 80g grated cheddar
  • 140g pastry mix
  • 1 bunch spring onions, thinly sliced
  • 3 bacon rashers, rind removed, coarsely chopped
  • 1 tbsp shredded parmesan
  • 1I tomato, thinly sliced
  • Method

    1. Preheat oven to 180 c. Line a rounds 18cm cake pan with baking paper.
    2. Combine eggs, milk, cheddar, pastry mix, onion, bacon and parmesan in a bowl. Pour into the pan. Arrange tomato on the top.
    3. Bake for 40 mins, until lightly golden and just set.
