Braised Star Anise Chicken

Ingredients

  • 1 cup kecap manis
  • 1 cup soy sauce
  • 1 cup water
  • 1/3 cup brown sugar
  • 2 whole star anise
  • 2 tablespoons sherry
  • 2 cloves garlic, lightly crushed
  • 2 pieces ginger (each the size of a 20 cent piece)
  • 1 x 2kg chicken
  • Lime wedges
  • Pickled pink ginger
  • Method

    1. Preheat oven to 180 C
    2. Put everything except the chicken, lime and ginger into a large flame-proof casserole dish. Bring to the boil over high heat, stirring to dissolve the sugar. Add the chicken breast side down. As soon as the liquid returns to the boil, cover the dish and put it in the oven.
    3. Bake the chicken for 40 mins, then remove and turn the chicken over and return to the oven for 45 mins. Remove from oven and allow to cool in the liquid for 30 mins.
    4. Serve with lime wedges and pickled ginger.
    5. Serve with steamed jasmine rice and green vegetables
