Chocolate Banana Bread

Ingredients

  • 250 g (2 cups) plain (all-purpose) flour
  • 2 teaspoons baking powder
  • 125 g unsalted butter, softened
  • 250 g (1 cup) caster (superfine) sugar
  • 4 ripe bananas, mashed
  • 2 eggs. lightly beaten
  • 1 teaspoon vanilla extract
  • 175 g (1 cup) good-quality dark or milk chocolate chips

Method

  1. Preheat the oven to 180°C (350°F/Gas 4).
  2. Sift the flour and baking powder into a large bowl.
  3. Mix the butter, sugar, banana, eggs, vanilla extract and chocolate chips in a separate bowl.
  4. Add to the dry ingredients and stir to combine, being careful not to over mix.
  5. Pour the batter into a non-stick, or lightly greased and floured, 19 x 11 loaf tin
  6. bake for 1 hour 15 minutes, or until the bread is cooked when tested with a skewer
  7. Leave to cool in the tin for 5 minutes before turning out onto a wire rack to cool.
  8. Serve in thick slices with butter
