Zucchini and carrot fritters

Method
- Squeeze the excess moisture out of the grated carrot and zucchini.
- Place zucchini, carrot, green onion, cheese, egg yolks, flour and baking powder into a medium bowl and mix well
- In a separate bowl whisk the egg whites to soft peaks.
- Fold the egg whites into the vegetable mix
- Heat oil in a frying pan over a medium heat
- Add 2 tablespoons of mixture per fritter and cook for 3-4 minutes on each side or until golden and cook through
- Drain on paper towel and server immediately
