Feta & Thyme Chichen Schnitzel

Ingredients
- 4 x 170 chicken breast
- Fresh bread crumbs
- 1 bunch of fresh thyme chopped
- 100 grams feta cheese grated (the hard type)
- 1 egg lightly beaten
- 50 grams plain flour
- Oil for frying
- Salt & pepper
Method
- Slice the chicken breast length ways in half. Place flat in a freezer bag and gently bash to flatten.
- Sprinkle the chicken with a little bit of salt and pepper to season
- Mix the chopped thyme, bread crumbs and grated feta in a bowl
- Roll the chicken in the flour until coated then transfer the the egg and coat in the egg
- coat the chicken in the bread crumb mixture and transfer to a plate.
- Its best to store the chicken in the fridge for an hour or so but i just shallow fried them in the oil then placed them in the oven to finish cooking.
