Tamarind apricot chicken

Ingredients

  • 1 tablespoon Vegetable oil
  • 2 kg Chicken thigh cutlets or drumsticks
  • 2 medium onions sliced
  • 2 cloves garlic crushed
  • 1 medium red capsicum thickly sliced
  • 2 teaspoons curry powder
  • 1 teaspoon cumin powder
  • 1 cup apricot nectar
  • 1 cup chicken stock
  • 400 grams apricot halves drained
  • 2 tablespoons tamarind paste
  • Method

    1. Heat the oil in a frying pan and gently brown the chicken. Transfer into the slow cooker pot
    2. Drain most of the fat from the pan and add the onions, garlic and capsicum; cook for 5 minutes on a medium heat until soft.
    3. Add the spices to the pan and season with salt and pepper and cook for 2 minutes until fragrant
    4. pour in the apricots, apricot nectar, chicken stock and tamarind and bring to the boil
    5. Pour the spiced apricot mix over the chicken and cook covered for 3 hours on high or 5 hours on low
    6. Serve with mashed potato and vegetables or noodles and vegetables
