Zucchini and carrot fritters

Ingredients




  • 3 small zucchini, grated


  • 2 medium carrots, peeled and grated


  • 4 green onions, thinly sliced


  • 1 cup tasty cheese, grated


  • 2 eggs, separated


  • 1/2 cup plain flour


  • 1 tsp baking powder


  • vegetable oil for shallow frying




  • Method
    1. Squeeze the excess moisture out of the grated carrot and zucchini.
    2. Place zucchini, carrot, green onion, cheese, egg yolks, flour and baking powder into a medium bowl and mix well
    3. In a separate bowl whisk the egg whites to soft peaks.
    4. Fold the egg whites into the vegetable mix
    5. Heat oil in a frying pan over a medium heat
    6. Add 2 tablespoons of mixture per fritter and cook for 3-4 minutes on each side or until golden and cook through
    7. Drain on paper towel and server immediately
