Braised beef with apricots

Ingredients

  • 1 tablespoon olive oil
  • 400 grams stewing beef large dice (the cheaper the better)
  • Salt and pepper to taste
  • 2 large brown onions diced
  • 3 cloves of garlic crushed
  • 50 grams semi-dried tomatoes chopped
  • 400 gram tin of crushed tomatoes
  • 600 ml water

  • Method

    1. Heat oil in heavy based pan.
    2. Saute beef on all sides until well browned.
    3. Season with salt and pepper and set aside
    4. Saute onion and garlic until soft
    5. Return the beef to the pan and add all of the remaining ingredients
    6. Bring to the boil and simmer for 1 - 2 hours stirring occasionally

    I used a pressure cooker and the recipe took about 30 minutes to cook for step 6 and did not add the water.
