Feta & Thyme Chichen Schnitzel

Ingredients
  • 4 x 170 chicken breast
  • Fresh bread crumbs
  • 1 bunch of fresh thyme chopped
  • 100 grams feta cheese grated (the hard type)
  • 1 egg lightly beaten
  • 50 grams plain flour
  • Oil for frying
  • Salt & pepper

Method
  • Slice the chicken breast length ways in half. Place flat in a freezer bag and gently bash to flatten.
  • Sprinkle the chicken with a little bit of salt and pepper to season
  • Mix the chopped thyme, bread crumbs and grated feta in a bowl
  • Roll the chicken in the flour until coated then transfer the the egg and coat in the egg
  • coat the chicken in the bread crumb mixture and transfer to a plate.
  • Its best to store the chicken in the fridge for an hour or so but i just shallow fried them in the oil then placed them in the oven to finish cooking.
I served these with some mashed potato with chopped shallots and butter and a wedge of lemon. hey were delicious
