Tamarind apricot chicken
Ingredients
1 tablespoon Vegetable oil2 kg Chicken thigh cutlets or drumsticks2 medium onions sliced2 cloves garlic crushed1 medium red capsicum thickly sliced2 teaspoons curry powder1 teaspoon cumin powder1 cup apricot nectar1 cup chicken stock400 grams apricot halves drained2 tablespoons tamarind pasteMethod
- Heat the oil in a frying pan and gently brown the chicken. Transfer into the slow cooker pot
- Drain most of the fat from the pan and add the onions, garlic and capsicum; cook for 5 minutes on a medium heat until soft.
- Add the spices to the pan and season with salt and pepper and cook for 2 minutes until fragrant
- pour in the apricots, apricot nectar, chicken stock and tamarind and bring to the boil
- Pour the spiced apricot mix over the chicken and cook covered for 3 hours on high or 5 hours on low
- Serve with mashed potato and vegetables or noodles and vegetables
