Spiced Coconut Fish
Ingredients
2 tsp grated ginger2 garlic cloves crushed1 tsp ground cumin1 tsp ground turmeric1 tsp garam masala2 cardamom pods bruised½ cup fish stock1 x 270ml can light coconut milk800g white fish fillets2 medium red capsicums chopped300 snow peas2 green shallots thinly sliced2 cups bean sprouts½ cup fresh coriander leaves2 tbs fish sauce2 tbs ground almondsMethod
- Lightly spray a deep non stick pan with oil and gently fry ginger and garlic for 1 min.
- Add spices, stir for 1 min until fragrant
- Add stock, coconut milk, fish sauce and ground almonds and bring to boil
- Add fish and capsicum and reduce to simmer for 5 mins
- Add snow peas and shallots and simmer for 3 mins
- Add beans sprouts and simmer for one minute or until fish is cooked and vegetables are tender.
- Serve with rice and coriander
