Enna's jam slice
Ingredients
Base:125g butter½ cup castor sugar1 egg2 cups self raising flourVanillaJam of your choice or even lemon butterTopping:1 cup Coconut1 eggAlmond essenceMethod
- Cream butter and sugar, add egg and vanilla. Add sifted flour and mix until all combine. Line a slice dish with baking paper and press mixture into dish with the back of a wet spoon.
- Spread with jam. (Don’t spread too thin)
- Mix coconut with egg and a couple of drops of almond essence.
- Bake in a moderate oven (180°C) 20-30 mins, until top is lightly golden.
