Christmas pudding

100g chopped butter
50g plain flour
100g raisins
100g sultanas
50g mixed peel
50g currents
5g nutmeg
5g mixed spice
100g dark brown sugar
100g bread crumbs
25g ground almonds
60ml milk
Pinch of salt
2 eggs
125 ml Stout beer
75ml Brandy
1/2 lemon zest grated and juice
1/2 orange zest grated and juice

Method
Mix all dry ingredients together
Add the liquid and mix well
Leave in a cool place for 3-4 days
Place intoa greased basin,  cover with greased greaseproof paper and steam for 6-8 hours (2-3 in the pressure cooker)
