Mae's four fruit marmalade

Makes about one and a half to two litres.

1 grapefruit
1 orange
1 lemon or 2 limes
1 green apple
2 kg sugar

Method
Slice all fruit and place in a large non-reactive sauce pan. Cover with 10 cups of cold water.

Leave over night. Drain the water (optional. If you like really bitter marmalade don't do this or replace 5 cups instead) and add 10 cups of water to the pan.
Bring to boil and simmer until tender for about 40-45 minutes.

Remove from heat and allow to cool slightly.

Add the sugar return to heat and bring to boil stirring until sugar is dissolved.

Boil for about 30 minutes or if you put a spoon full on a saucer in the freezer it wrinkles when you run your finger through.

Store in sterilised jars.
