Savoury and spicy peach chutney

INGREDIENTS 

Serves 25 portions
5 vine ripened tomatoes
1 green apple (peeled and grated)
1 brown onion (peeled and finely chopped)
1 lime 300g caster sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon white pepper (crushed)
2 gloves garlic (chopped)
20g ginger (peeled and grated)
300ml chardonnay vinegar
1kg yellow or white peaches (stoned and cut into 12)

METHOD
1. Bring a saucepan of water to the boil, add the tomatoes and blanch for 20 seconds then plunge them into iced water, this will stop them from cooking further.
2. Remove from the iced water, peeling away and discarding the skins. Cut the tomatoes in half and scoop out the seeds. Roughly chop the flesh and place into a heavy based saucepan along with the grated apple, chopped onion, the juice and zest of the lime, caster sugar, cinnamon, nutmeg, white pepper, ginger, garlic and lastly the vinegar.
