Maureen's boiled fruit cake

This is my mother in-law's very simple and delicious recipe.


  • 125 grams butter
  • 1 cup sugar
  • 1 cup milk
  • 375 grams mixed fruit
  • 1 teaspoon mixed spice
  • 2 eggs, lightly beaten
  • 1 cup plain flour
  • 1 cup self raising flour
  • 1 teaspoon bicarb soda

    1. Pre-heat the oven to 170 degrees C
    2. Add the butter, sugar, milk, mixed fruit and mixed spice to a saucepan and bring it to the boil
    3. Cool for about 15 minutes then add the bicarb soda
    4. Add the eggs, sifted plain and self raising flours
    5. Bake at 170 degrees C for about 1 hour or until a skewer comes out dry.
