Spiced Coconut Fish

Ingredients

  • 2 tsp grated ginger
  • 2 garlic cloves crushed
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 2 cardamom pods bruised
  • ½ cup fish stock
  • 1 x 270ml can light coconut milk
  • 800g white fish fillets
  • 2 medium red capsicums chopped
  • 300 snow peas
  • 2 green shallots thinly sliced
  • 2 cups bean sprouts
  • ½ cup fresh coriander leaves
  • 2 tbs fish sauce
  • 2 tbs ground almonds
  • Method

    1. Lightly spray a deep non stick pan with oil and gently fry ginger and garlic for 1 min.
    2. Add spices, stir for 1 min until fragrant
    3. Add stock, coconut milk, fish sauce and ground almonds and bring to boil
    4. Add fish and capsicum and reduce to simmer for 5 mins
    5. Add snow peas and shallots and simmer for 3 mins
    6. Add beans sprouts and simmer for one minute or until fish is cooked and vegetables are tender.
    7. Serve with rice and coriander
