Enna's jam slice

Ingredients

Base:
  • 125g butter
  • ½ cup castor sugar
  • 1 egg
  • 2 cups self raising flour
  • Vanilla
  • Jam of your choice or even lemon butter
  • Topping:
  • 1 cup Coconut
  • 1 egg
  • Almond essence
  • Method

    1. Cream butter and sugar, add egg and vanilla. Add sifted flour and mix until all combine. Line a slice dish with baking paper and press mixture into dish with the back of a wet spoon.
    2. Spread with jam. (Don’t spread too thin)
    3. Mix coconut with egg and a couple of drops of almond essence.
    4. Bake in a moderate oven (180°C) 20-30 mins, until top is lightly golden.
