Sugar and spice almonds

INGREDIENTS

  • 1 ½ Cups Pure icing sugar
  • 1 ½ tbls ground cinnamon
  • 5 cups (750 g) natural almonds

METHOD

1. Pre-heat the oven to 180 degrees

2. Sift the icing sugar and cinnamon together 3-4 times into a large bowl

3. Place the almonds into a colander and rinse with cold water

4. Tip the wet almonds into a roasting pan

5. Sift the icing sugar mixture over the wet almonds and mix well until all almonds are covered

6. Roast for 20 minutes until the almonds are slightly dry, browned and fragrant. Stir occasionally to keep the almonds separate.

7. Once the almonds are cooled store them in an airtight container in a cool dry place or just eat them.
