Banana and honey loaf

Ingredients

  • 125 grams unsalted butter (softened)
  • 140 grams (3/4 cup) brown sugar
  • 2 eggs lightly beaten
  • 2 tablespoons of honey
  • 1 large (175 grams) ripe banana
  • 225 grams (1 1/2 cups) wholemeal self raising flour
  • 2 teaspoons ground cinnamon
  • Method

    1. Preheat the oven to 180 degrees
    2. Combine butter and sugar in food processor for 1 minute or until lighter in colour
    3. Add the egg and process until combined
    4. heat 1 tablespoon of the honey in the microwave until runny. Add the warm honey and banana to the food processor and blend until smooth
    5. Add the flour and cinnamon, blend until combined
    6. Spoon evenly into a 22 x 12cm greased and lined loaf tin. Bake for 30-40 minutes or when you insert a skewer it comes out clean
    7. Leave in teh tin for 5 minutes
    8. Turn out onto a wire rack. Warm the remaining honey and brush it over the loaf.
    9. Serve warm or cool.
