Lemon and strawberry self-saucing pudding

Ingredients

Serves 6-8 people

  • 250g punnet strawberries, sliced
  • 1 cup self-raising flour
  • 3/4 cup caster sugar
  • 1 egg, lightly beaten
  • 50g unsalted butter, melted
  • 1/2 cup milk
  • 2 tsps finely grated lemon rind
  • 2 tblsps lemon juice
  • 1 1/4 cups boiling water
  • Cream, to serve

Directions

  1. Lightly grease a shallow ovenproof dish (8-cup capacity).
  2. Arrange strawberries over base. Combine flour and cup of the sugar in a medium bowl. Add egg, butter, milk and rind. Stir until smooth.
  3. Pour over strawberries in prepared dish. Sprinkle evenly with remaining sugar.
  4. Combine juice and water in a medium jug. Gently pour over pudding mixture.
  5. Cook in a moderate oven (180C) for 35 minutes, or until browned and cooked. Stand for 5 minutes if possible.
  6. Serve hot with cream.

Substitutes

  • Replace the lemon with orange
  • Replace the strawberries with blueberries.
